The incumbent in this position is responsible for preparing meals at the Seminole Tribe of Florida's Swamp Water Café, ensuring compliance with established policies and procedure and food and safety regulations. The individual follows recipes, portion controls, and presentation specifications in order to prepare meals. The incumbent trains and supervises kitchen staff, prepares all hot items according to menu specifications and preps work station. Assures proper labeling and storage of left over products, prepares requisition for supplies and food items for production in the work station. This position is also responsible for daily foods and waste inventory reports. High School diploma or equivalent GED required. A minimum of two (2) years of experience working in food service line settings as a Lead Line Cook or related field is required. An equivalent combination of education, training and experience may be considered. Possession of a Florida Driver's License is required as may be required to travel to Seminole Reservations or other facilities. Must demonstrate excellent written and verbal communication skills. Must demonstrate excellent organizational and interpersonal skills required. Must have the ability to work a flexible schedule including evenings, weekends and holidays.
